Welcome to my new favorite breakfast EVER... overnight oats.
Breakfast is the most important meal of the day, and usually it's the one that we tend to skip. You wake up, you're running late, you need to get ready.. you just don't have time to eat breakfast unless you stop and get fast food on the way to work.
Overnight oats have been going viral for the last few months and I never really understood what all the fuss was about until now. You make it the night before... stick it in the fridge... and it's ready for you when you wake up! Perfect grab-and-go breakfast. PLUS, it's good for you!
You don't have to follow my recipe exactly.. but I'm gonna share it with you in case you want to try! You can tweak it and make it your own, add or change ingredients that you like better, completely make it your own and let me know how you like it.
Layer in a bowl or jar
1/2 cup rolled oats
1 tbs chia seeds
Enough milk to moisten the oats & seeds (I used unsweetened cashew milk)
1/3 cup yogurt (I used 'So Delicious' coconut milk vanilla yogurt)
Top with your choice of fruit (I used blueberries & raspberries)
Leave in the fridge overnight.
Topped mine with granola (Pure Elizabeth blueberry granola) and sprinkled a little bit of coconut flakes on top.
If you're really feelin' yourself, sprinkle cinnamon on top too
