Brooke Cooks: Hawaiian Zucchini Bread Recipe

Okay y'all, I tweet about this a few days ago.. and y'all have been asking for the recipe so I thought I'd share with you!

Get ready for the most delicious zucchini bread of your life!

Yield 3 loaves (if you want to make less. just cut the recipe in half)


4 cups flour

3 cups sugar

2 tsp baking powder

1-1/2 tsp salt

1 tsp baking soda

4 eggs

1-1/2 cups canola oil

2 tsp vanilla extract

1 tsp rum extract

3 cups shredded (or finely chopped) zucchini

1 cup crushed (drained) pineapple

1 mashed banana

How to make:

In large bowl - combine flour, sugar, baking powder, salt, and baking soda.

In small bowl - combine eggs, oil, and extracts.

Stir small bowl ingredients into the large bowl just until moistened.Fold in zucchini, pineapple, banana, and nuts.Pour into greased and/or floured pans

Bake at 350 degrees for 45 to 55 minutes

Cool 10 minutes before removal onto wire racks.
